Delicious cookies featuring a soft apple filling caramelized with butter, brown sugar, and cinnamon, mixed into a spiced cookie dough, and finished with a smooth vanilla glaze.
For the apple filling, cook 1 large diced apple with 1 tbsp butter, 2 tbsp brown sugar, 1 tsp cinnamon, and a pinch of salt over medium heat. Cook until the apples are soft and a thick caramel forms with no runny liquid left. Cool completely.
For the cookies, whisk together ½ cup melted butter and ¾ cup dark brown sugar. Mix in 1 egg and 1 tbsp vanilla. In a separate bowl, whisk together 1¼ cups all-purpose flour, ½ tsp baking soda, ¼ tsp baking powder, 1 tsp cinnamon, ¼ tsp nutmeg, and ½ tsp salt. Stir the dry ingredients into the wet ingredients until just combined.
Fold in the cooled caramelized apples. Scoop about 2 tbsp of dough per cookie onto a parchment-lined baking sheet and flatten slightly. Bake at 350°F for 11–13 minutes, until the edges are golden and the centers are just set. Cool for 5 minutes, then transfer to a rack.
For the glaze, whisk ½ cup powdered sugar with 1–2 tbsp milk and ¼ tsp vanilla until smooth. Drizzle over completely cooled cookies and let set.
